Apple-Bottom Biscuits
It's general conference, that wonderful time of the year when we can spend the whole day together. This special breakfast started the day off right, and used apples from our trees outside. There are a couple of steps, so make sure you give yourself a little extra time for this recipe. It's worth it, though! My husband and kids devoured it, and my husband, who isn't a big sweets lover, even said it was really delicious.
Apple-Bottom Biscuits
1 3/4 cups all-purpose flour
1/4 cup ground flax (or wheat bran)
2 tbsp sugar
1 tbsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
1/2 cup butter or margarine
2/3 cup milk
6-8 large apples, peeled, cored and sliced
1/4 cup butter or margarine
1/2 cup brown sugar
1 cup powdered sugar
2-3 tbsp orange juice or milk
1) Pre-heat oven to 400 degrees. Get cast-iron skillet (oven proof) out on your stovetop.
2) In a large bowl, mix together the flour, flax, sugar, baking powder, cinnamon, and salt. Cut in the margarine until the size of peas. Pour in the milk all at once, stir with a fork just until mixed. Knead once or twice, but don't over mix it.
3) Melt the 1/4 cup butter in the cast iron skillet over high heat. Add the brown sugar and apples. Cook for 3 or 4 minutes, just until apples begin to soften (not ARE soft, just begin. They'll still get more cooking time.)
4) Turn off the heat and drop the biscuit dough on top of the apples by large spoonfuls, so that there are individual biscuits covering all the apples.
5) Bake at 400 degrees for 12 minutes.
6) While it's in the oven, mix together the powdered sugar and enough orange juice just to make nice glaze. When the biscuits are done, drizzle the glaze over the top and enjoy.

ReplyDeleteWe agreed--I've been making mine with the "6" large apples, or more. I'm also going to experiment with adding nuts.
